Season: A fantastic growing season with loads of Winter and spring rains. The Summer was milder than the usual high Canowindra temperatures. A wonderful retention of natural acid was seen across all varieties.
Winemaking Notes:
Hand harvested in the cool of the morning. Grapes chilled overnight before processing.
Kept for 2 day cold soak, fermented with 30% Whole bunch with native yeast.
Some time of skins post fermentation to build savoury interest and depth before being basket pressed.
Racked to barrel with fine solids for MLF.
Minimal filtration and sulfur additions prior to bottling. No fining = Vegan Friendly
