Season: A fantastic growing season with loads of Winter and spring rains. The Summer was milder than the usual high Canowindra temperatures. A wonderful retention of natural acid was seen across all varieties.
Winemaking Notes:
Hand picked into 10kg picking crates on the 28th of January and placed in the cool room overnight. De-stemmed and basket pressed the next day with the Ffree run and pressings were combined into a stainless steel tank. The juice was then lightly racked the next day to ‘get the dust of the vineyard’ to three Barrels. Two of these barrels were 2nd fill barrels and one was an older barrel. The juice was left to warm up to ambient temperature with fermentation spontaneously occurring. Fermentation temperature peaked at 22 with the average being around 18. Fermentaion finished within 10 days. The wine was then batonnaged weekly.
