WINEMAKING
The Piquepoul Blanc was harvested when flavours of green apple and lime were evident. Given the high natural acidity of Piquepoul, we look for flavour balance before making the harvest decision. The fruit was harvested at 12 Baumé early in the morning and was in the winery within 30 minutes of picking. The juice was gently pressed, with only the free-run portion used in this wine. Fermentation of the free-run juice was performed in a stainless-steel tank at 14 °C to maintain freshness, while aromatic yeasts were used to promote aromatics. Our winemaking technique with Piquepoul is to produce a wine that is fresh and vibrant. The speed from harvest to the winery and the use of only free-run juice have ensured we have achieved a very refreshing and vibrant wine.

VINTAGE NOTES
The 2023–24 growing season in the Central Ranges commenced with average temperatures and rainfall conditions. Yields were reduced following a frost on October 28, 2023. Higher-than-average rainfall during December allowed for good canopy growth and berry size. The mild December and January 2024,
coupled with lower-than-average yields, led to harvest commencing two weeks earlier than the long-term average.
