WINEMAKING
A decision was made to harvest our fruit at 12 Baume, while the grapes displayed good natural acidity and vibrant red fruit. The winemaking process was unique because we crushed, chilled, and only kept the free-run juice (the pressings were disposed of). Fermentation was carried out according to our aromatic white ferment program. A portion of this wine was fermented in older barrels to incorporate texture and complexity.

Antipasto, spicy food, or simply enjoyed as a relaxing drink at the end of the day.
VINTAGE NOTES
The 2023-24 growing season in the Central Ranges commenced with average temperature and rainfall conditions. Yields were reduced following a frost on October 28, 2023. Higher-than-average rainfall during December allowed for good canopy growth and berry size. The mild conditions in December and January 2024, coupled with lower-than-average yields, led to the harvest commencing two weeks earlier than the long-term average.
